Hoseki Restaurant on is looking for a Sushi Chef to work alongside the Head Chef to manage food stock and handle a wide range of ingredients, with attention to detail to fulfill quality standards.To be successful in this role, you should have experience with Japanese cuisine. Ultimately, you will help us establish our reputation as one of the best Japanese restaurants in the area. RESPONSIBILTIES: Creating & preparing a rich sushi menu with various main ingredients and raw fish (forexample, salmon, tuna, unagi)Prepare appetizers, soups and salads that are close to the philosophy of Japanese cuisine Manage and lead the kitchen staff in head chef’s absenceCoordinate with our wait staff to ensure proper cooking, considering special requests and food allergiesProvides guidance & training to junior kitchen staff members, including but not limited, to line cooking, food preparation and dish platingSupervises all food preparation and presentation to ensure quality and restaurant standardsOversee and organizes kitchen stock and ingredients, including proper dating and quality assuranceImprove waste reduction and manage budgetary concernsWorks with head chef to maintain kitchen organization, staff ability and training opportunitiesMonitor and maintain hygiene and health and safety principles REQUIREMENTS:Matric, Culinary Diploma preferredPreferably +/- 4 years previous experience in a senior chef roleWork experience as a Sushi Chef or at an Asian restaurantGood knowledge of various sushi types and sushi-rolling techniquesOwn transport with valid driver’s licenseAbility to work both fast and accuratelyLeadership and management skillsAble to work in a teamBasic computer skills (word, excel, outlook)Exceptional customer-service skillsExcellent written & oral communication skillsStrong organizational skillsAttention to detailAvailability to work within opening hours (e.g. evenings, public holidays, weekends)Ability to work under pressureCreative problem-solving skills
